Italian S Cookies
Ingredients:
1 cup sugar
¼ cup milk
3 large eggs
1 tsp vanilla extract
1 Lemon zest 1 lemon
½ lemon juiced
1 cup shortening crisco
3 ½ cups all purpose flour 31/2 to 4 cups flour
4 tsp baking powder
Instructions:
- Preheat oven to 350℉
- Mix together egg and sugar.
- Add milk, vanilla extract, lemon juice and lemon zest.
- Melt the shortening until it is liquid and let it cool somewhat before adding it to the mixture (you don’t want it to cook the egg).
- Add flour to mixture a little bit at a time, when you can’t mix it any more by hand roll it out onto a floured surface and continue to incorporate flour as needed until you reach a consistency that isn’t sticky.
- Roll into a ball and using a knife or dough scraper, divide the dough into 6 slices.
- Roll out each slice into about 1 inch roll and cut into 4 to 5 inch pieces.
- Take each piece and shape it into an S then place it on a baking sheet lined with parchment paper.
- Bake for about 10 to 15 minutes or until tops are golden.
- Be careful to keep an eye on the cookie bottoms that they don’t burn.
