Almond Cookies

Ingredients:

200 gr of almond flour
2 eggs
2 teaspoons of yeast
A pinch of salt
100 gr. of erythritol or any other sweetener
Almonds to decorate
Lemon zest
Juice of half a lemon

Instructions:

  • This recipe is very easy to prepare and will always be luxurious, we just need to make a good raw material that helps us enjoy some wonderful flavors.
  • We get to work with the lemon, we will extract all the juice so that we come out some awesome cookies with that aroma we are looking for.
  • In addition, we will add the lemon zest, an element that will enhance even more the citrus dyes of this delicacy.
  • Add the juice and zest to a bowl, add the almond flour. If we have no flour we can directly crush some almonds already toasted.
  • This way we will get the finish that we are looking for, a base of cookies to which we need to add a pinch of salt and sweetener to taste.

  • Erythritol is a good option, we can also put Stevia or even honey, the important thing is to set aside the sugar in this dessert.
  • With the base ready, we put the eggs one by one and the yeast.
  • Knead well and shape the cookies.
  • Prepare the oven, put it at 180 o. Continue with a dish, prepare or lined with baking paper.
  • We put the cookies on top, decorate with whole almond. Bake at 180o for about 8 minutes, until golden.
